Garlic Mashed Potatoes

5 large potatoes
2 Tbsp. unsalted butter
125 ml heavy cream
2 cloves garlic
1 tsp. italian herbs
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 tsp. nutmeg
Peel and dice potatoes. Rinse in cold water, then boil, stirring occasionally, until they fall apart when poked with a fork.
A few minutes before the potatoes are done, heat the butter and cream in a sauce pan. Peel and crush the garlic, then add it along with the herbs and let it simmer for a few minutes.
Drain the potatoes and return to pot. Add the butter/cream/garlic mixture and the dry spices, then mash.
Add some freshly shredded cheddar cheese while mashing
Use thin-skinned potatoes and leave the skins on
Add some flavorful red spices like chipotle or smoked paprika
