Teriyaki Sauce


  • 3 Tbsp. soy sauce

  • 2 Tbsp. rice vinegar

  • 2 Tbsp. mirin

  • 2 Tbsp. sesame oil

  • 2 Tbsp. honey

  • 1 tsp. sriracha (optional)

  • 1 tsp. fish sauce

  • 2 cloves garlic

  • 2cm fresh ginger

  • Freshly ground black pepper (to taste)


Peel and finely grate the garlic and ginger, then mix all ingredients together.

  • Use half of the sauce as a marinade for pork chops or chicken thighs

  • Make the other half into a glaze by simmering for a few minutes in a sauce pan then stirring in a corn starch slurry (equal parts corn starch and cold water mixed together - about 1 tsp. of each should be enough)
