Teriyaki Sauce

- 3 Tbsp. soy sauce
- 2 Tbsp. rice vinegar
- 2 Tbsp. mirin
- 2 Tbsp. sesame oil
- 2 Tbsp. honey
- 1 tsp. sriracha (optional)
- 1 tsp. fish sauce
- 2 cloves garlic
- 2cm fresh ginger
- Freshly ground black pepper (to taste)
Peel and finely grate the garlic and ginger, then mix all ingredients together.
- Use half of the sauce as a marinade for pork chops or chicken thighs
- Make the other half into a glaze by simmering for a few minutes in a sauce pan then stirring in a corn starch slurry (equal parts corn starch and cold water mixed together - about 1 tsp. of each should be enough)
